Ingredients

  • 1 c graham cracker crumbs
  • 6 Tbsp sugar
  • 3 Tbsp melted margarine
  • 1 can Eagle Brand milk
  • 1 Tbsp grated lemon rind
  • 12 c lemon juice
  • 2 eggs separated
  • 1 can Bakers Angel Flake coconut

Directions

  1. Combine graham cracker crumbs with 2 tablespoons of the sugar and melted margarine
  2. Press mixture on bottom and sides of lightly buttered refrigerator tray chill
  3. Beat egg yolks until thick
  4. Combine
  5. with
  6. Eagle Brand milk
  7. Add lemon rind and juice gradually
  8. stirring
  9. until
  10. thick
  11. Stir
  12. in 1 cup Bakers coconut
  13. Beat egg whites until stiff
  14. Gradually beat in rest
  15. of sugar
  16. Fold into lemon mixture
  17. Pour into tray Sprinkle
  18. top with remaining coconut
  19. Chill in freezer until firm about
