Lemon Snowballs

Ingredients

• 12 c vegetable shortening
• 23 c sugar
• 2 tsp grated lemon rind
• 1 egg
• 3 tsp lemon juice
• 1 Tbsp water
• 1 34 c sifted flour
• 14 tsp baking soda
• 14 tsp cream of tartar
• 12 tsp salt
• 12 c finely chopped nuts
• about 1 c confectioners sugar

Directions

1. Cream shortening and sugar together in bowl until light and fluffy
2. Add lemon rind and egg beat well
3. Stir in lemon juice and water
4. Sift flour baking soda cream of tartar and salt into separate bowl
5. Add to shortening mixture and blend well
6. Stir in nuts
7. Refrigerate dough until well chilled
