Lemon Snowballs
Ingredients
- 12 c vegetable shortening
- 23 c sugar
- 2 tsp grated lemon rind
- 1 egg
- 3 tsp lemon juice
- 1 Tbsp water
- 1 34 c sifted flour
- 14 tsp baking soda
- 14 tsp cream of tartar
- 12 tsp salt
- 12 c finely chopped nuts
- about 1 c confectioners sugar
Directions
- Cream shortening and sugar together in bowl until light and fluffy
- Add lemon rind and egg beat well
- Stir in lemon juice and water
- Sift flour baking soda cream of tartar and salt into separate bowl
- Add to shortening mixture and blend well
- Stir in nuts
- Refrigerate dough until well chilled
