Lemon Sponge Custard Pie

Ingredients

  • 3 Tbsp butter or margarine
  • 1 c sugar
  • 2 eggs separated
  • juice of 1 lemon
  • 3 Tbsp flour
  • 18 tsp salt
  • 1 c milk
  • 1 9-inch pie crust unbaked

Directions

  1. Cream butter
  2. Add sugar egg yolks lemon juice flour and salt
  3. Mix well
  4. Stir in milk
  5. Beat egg whites until stiff
  6. Fold egg whites into 1st mixture
  7. Pour into crust-lined pie plate Bake at 450 for 10 minutes then 35 more minutes at 350
