Lemon Sponge Pudding

Ingredients
- 1 cup sugar
- 1 Tbsp butter
- 2 Tbsp flour
- Grated rind juice of one lemon
- 2 egg yolks beaten
- 2 egg whites beaten
- 1 cup milk
Directions
- Cream together sugar butter flour the juice and rind of the lemon
- Mix egg yolks with milk and add to first mixture
- Fold this into beaten egg whites
- Pour into well buttered pudding dish Place dish in pan shallow of warm water
- Bake in 325 oven until set firm and golden brown
- Serve warm or cold
