Lemon Sponge Pudding

Ingredients

  • 1 cup sugar
  • 1 Tbsp butter
  • 2 Tbsp flour
  • Grated rind juice of one lemon
  • 2 egg yolks beaten
  • 2 egg whites beaten
  • 1 cup milk

Directions

  1. Cream together sugar butter flour the juice and rind of the lemon
  2. Mix egg yolks with milk and add to first mixture
  3. Fold this into beaten egg whites
  4. Pour into well buttered pudding dish Place dish in pan shallow of warm water
  5. Bake in 325 oven until set firm and golden brown
  6. Serve warm or cold
