Ingredients

  • 2 c sweetened shredded coconut
  • 12 c sugar
  • 2 egg whites
  • 1 recipe Lemon Tart Filling

Directions

  1. Process coconut and sugar in food processor until coconut is minced
  2. Blend in egg whites
  3. Press mixture into well-greased 4-inch tartlet pans with removable bottoms
  4. Bake at 325 for 25 to 30 minutes or until golden
  5. Remove from pans
