Lemon Zucchini Bread
Ingredients
- 2 12 c flour can use 12 c whole wheat
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp shredded lemon peel
- 34 tsp salt
- 12 tsp cinnamon
- 14 tsp ginger
- 2 eggs beaten
- 1 14 c sugar brown or white
- 12 c cooking oil
- 14 tsp lemon or orange extract
- 2 c shredded zucchini
- 1 c walnuts chopped optional
Directions
- Sift together and set aside flour baking powder baking soda lemon peel salt cinnamon and ginger
- Mix well and beat eggs sugar cooking oil and lemon or orange extract
- Add zucchini and walnuts
- Put all three mixtures together and mix well
- Turn into greased 9 x 5 x 3-inch loaf pan
- Bake in 350 oven for 50 to 60 minutes
- Cool in pan 10 minutes
