Lemony Green Beans
Ingredients
- 1 12 lb small fresh green beans
- 1 c cherry tomato halves
- 1 Tbsp lemon juice
- 1 tsp olive oil
- 12 tsp grated lemon rind
- 14 tsp salt
- 18 tsp freshly ground pepper
Directions
- Wash green beans
- Trim ends
- Remove strings
- Drop beans into a large saucepan of boiling water
- Cook 7 minutes or until crisp-tender
- Drain well
- Combine the beans and tomatoes in a large bowl set aside
- Combine lemon juice and the next 4 ingredients stir well
- Pour over vegetables tossing gently to coat
- Yields 8 servings
