Light N Easy Chicken And Rice Casserole

Ingredients
- 1 c long grain rice
- 6 boneless skinless chicken breasts
- 2 Tbsp margarine
- 2 tsp parsley
- salt and pepper
- 1 c sliced celery
- 34 c chopped onion
- 1 10 14 oz can cream of mushroom soup
- 1 c nonfat yogurt
- 2 c carrots sliced
- paprika
Directions
- Cook rice according to package directions
- Combine cooked rice and next 5 ingredients
- Mix place into a lightly greased baking dish
- Top with chicken breast
- Combine soup and yogurt spoon over chicken breasts
- Bake uncovered at 350 for 30 minutes
- Remove from oven
- Add carrots top with paprika
- Bake an additional 15 minutes
- Makes 6 servings
