Light Old-Fashioned Banana Pudding
Ingredients
- 12 c sugar
- 3 Tbsp cornstarch
- 13 c water
- 1 12 oz can evaporated skim milk
- 13 c egg substitute
- 12 c nonfat sour cream
- 1 tsp vanilla extract
- 22 vanilla wafers
- 3 medium bananas sliced
- 3 egg whites
- 14 tsp cream of tartar
- 1 Tbsp sugar
Directions
- Combine sugar and cornstarch in a heavy saucepan gradually stir in water evaporated milk and egg substitute
- Cook over medium heat stirring constantly until mixture comes to a boil Boil for 1 minute stirring constantly
- Remove from heat and fold in sour cream and vanilla
