Lima-Corn Bake

Ingredients

  • 1 10 oz pkg frozen lima beans thawed or fresh
  • 1 10 oz pkg frozen corn Niblets thawed or fresh
  • 2 small tomatoes thin sliced
  • 1 small onion thin sliced
  • 1 clove garlic crushed more if you like
  • 1 c or more tomato juice

Directions

  1. Place 12 the lima beans in bottom of nonstick baking pan Top with a layer of corn then top the corn with 12 of the tomato slices the onion and garlic
  2. Top with another layer of lima beans and corn end with tomato slices
  3. Pour tomato juice over all
  4. Cover and bake at 350 for 40 minutes
  5. Serves 4 to 6
