Lima-Corn Bake
Ingredients
- 1 10 oz pkg frozen lima beans thawed or fresh
- 1 10 oz pkg frozen corn Niblets thawed or fresh
- 2 small tomatoes thin sliced
- 1 small onion thin sliced
- 1 clove garlic crushed more if you like
- 1 c or more tomato juice
Directions
- Place 12 the lima beans in bottom of nonstick baking pan Top with a layer of corn then top the corn with 12 of the tomato slices the onion and garlic
- Top with another layer of lima beans and corn end with tomato slices
- Pour tomato juice over all
- Cover and bake at 350 for 40 minutes
- Serves 4 to 6
