Lima Beans With Mushrooms And Celery

Ingredients
- 2 pkg frozen lima beans
- 2 cans mushrooms or 12 lb fresh
- 1 medium onion minced
- 5 stalks crisp celery
- 14 lb butter
- 2 Tbsp flour
- 12 tsp salt
- 12 tsp nutmeg
- 18 tsp pepper
- 12 c heavy cream I use half and half
- paprika for garnish
- a little sherry if desired
Directions
- Cook beans
- Mince onion
- Cut celery into 12-inch pieces as thick as a matchstick
- Saute the onion and celery in butter until golden
- Add mushrooms
- Sprinkle flour mixed with salt nutmeg and pepper
- Toss until well blended
- Reduce heat and stir cream in
- Add to cooked beans
- I serve in a vegetable dish
- Garnish with lots of paprika
- Stir in a little sherry just before serving if desired
