Linguini With Salmon Sauce
Ingredients
- 12 oz linguini
- 14 lb unsalted butter
- 1 c petite peas
- 1 c heavy cream
- 2 c flaked cooked salmon preferably fresh
- 1 c Parmesan cheese preferably Reggiano
- 14 c chopped parsley
- salt white pepper and nutmeg to taste
Directions
- Cook linguini in boiling water drain
- Melt 2 tablespoons of butter in heavy saucepan
- Add peas and saute for 1 minute
- Add remaining butter and cream reduce heat to low and cook until butter melts
- Add salmon 12 cup cheese and spices
- Simmer until cheese melts and salmon is heated through
- Toss with cooked pasta and garnish with remaining cheese and parsley
- Serves 4
