Linguini With Salmon Sauce

Ingredients

  • 12 oz linguini
  • 14 lb unsalted butter
  • 1 c petite peas
  • 1 c heavy cream
  • 2 c flaked cooked salmon preferably fresh
  • 1 c Parmesan cheese preferably Reggiano
  • 14 c chopped parsley
  • salt white pepper and nutmeg to taste

Directions

  1. Cook linguini in boiling water drain
  2. Melt 2 tablespoons of butter in heavy saucepan
  3. Add peas and saute for 1 minute
  4. Add remaining butter and cream reduce heat to low and cook until butter melts
  5. Add salmon 12 cup cheese and spices
  6. Simmer until cheese melts and salmon is heated through
  7. Toss with cooked pasta and garnish with remaining cheese and parsley
  8. Serves 4
