LisaS Famous Breakfast Eggs Florentine

Ingredients

  • 2 10 oz each pkg frozen chopped spinach
  • 6 eggs
  • 1 10 12 oz can cream of mushroom soup
  • 1 Tbsp onion flakes
  • pinch of pepper flakes
  • 1 c shredded mild Cheddar cheese

Directions

  1. Cover the bottom of shallow baking dish 10 x 6 x 2-inch with spinach
  2. Break eggs around outside edge of dish
  3. Pierce egg yolks twice and egg whites several times with a toothpick
  4. Mix soup pepper and onion flakes
  5. Pour around eggs
  6. Cover spinach completely
  7. Cover and cook on High for 7 to 8 minutes or until eggs are almost set
  8. Sprinkle cheese
  9. Let stand covered 5 minutes
  10. Serves 6 people
