LisaS Famous Breakfast Eggs Florentine
Ingredients
- 2 10 oz each pkg frozen chopped spinach
- 6 eggs
- 1 10 12 oz can cream of mushroom soup
- 1 Tbsp onion flakes
- pinch of pepper flakes
- 1 c shredded mild Cheddar cheese
Directions
- Cover the bottom of shallow baking dish 10 x 6 x 2-inch with spinach
- Break eggs around outside edge of dish
- Pierce egg yolks twice and egg whites several times with a toothpick
- Mix soup pepper and onion flakes
- Pour around eggs
- Cover spinach completely
- Cover and cook on High for 7 to 8 minutes or until eggs are almost set
- Sprinkle cheese
- Let stand covered 5 minutes
- Serves 6 people
