Liverwurst Pinwheels

Ingredients

  • 2 4 12 oz cans liver spread
  • 12 c chopped gherkins
  • 2 tsp spicy mustard
  • 7 Tbsp soft margarine
  • 1 loaf unsliced bread
  • 2 gherkins sliced to make 9 long strips
  • 4 Tbsp margarine
  • 1 c finely chopped parsley

Directions

  1. Combine liver spread chopped pickle mustard and margarine Trim crust from bread
  2. Cut into 9 long slices spread with oleo and 2 tablespoons mixture
  3. Place gherkin strip across narrow end of each slice and roll up like jelly roll
  4. Wrap tightly in damp linen towel
  5. Chill 2 hours
  6. Slice each strip into 8 pieces
