Lo-Cal Apple Pie
Ingredients
- 2 egg yolks
- 2 tsp Sucaryl
- 2 Tbsp cornstarch
- 12 tsp cinnamon
- 14 tsp nutmeg
- 14 c evaporated milk
- 8 large peeled apples
- 2 egg whites
- 4 Tbsp powdered milk
- 12 tsp lemon extract
- 14 tsp vanilla extract
Directions
- Place egg yolks Sucaryl and next 4 ingredients in blender and blend 2 seconds
- Add apples
- Blend until fine
- Pour into buttered pie plate
- Bake at 450 for 25 minutes
- Beat egg whites until stiff peaks form
- Add remaining ingredients and process along with 1 teaspoon Sucaryl
- Put meringue on pie spreading to edges
- Brown at 350 until golden brown about 10 minutes
- Serves 6 155 calories per serving
