Lo-Cal Apple Pie

Ingredients

  • 2 egg yolks
  • 2 tsp Sucaryl
  • 2 Tbsp cornstarch
  • 12 tsp cinnamon
  • 14 tsp nutmeg
  • 14 c evaporated milk
  • 8 large peeled apples
  • 2 egg whites
  • 4 Tbsp powdered milk
  • 12 tsp lemon extract
  • 14 tsp vanilla extract

Directions

  1. Place egg yolks Sucaryl and next 4 ingredients in blender and blend 2 seconds
  2. Add apples
  3. Blend until fine
  4. Pour into buttered pie plate
  5. Bake at 450 for 25 minutes
  6. Beat egg whites until stiff peaks form
  7. Add remaining ingredients and process along with 1 teaspoon Sucaryl
  8. Put meringue on pie spreading to edges
  9. Brown at 350 until golden brown about 10 minutes
  10. Serves 6 155 calories per serving
