Lo-Fat Broccoli Skillet Quiche
Ingredients
- 3 Tbsp Sunflower margarine
- 14 c onion chopped
- 1 12 c broccoli chopped
- 12 c tomato chopped
- 12 c skim milk Mozzarella cheese shredded
- 12 tsp salt
- 18 tsp pepper
- 1 c refrigerated imitation eggs
Directions
- In Teflon-lined 9-inch skillet melt margarine over medium heat
- Add onion and cook until tender
- Add broccoli tomato cheese salt and pepper
- Pour imitation eggs over vegetable-cheese mixture do not stir
- Reduce heat to low Cover and cook 10 minutes or until quiche is set
- Remove from heat and let stand 5 minutes
- Cut in wedges to serve
- Serves 4 to 6
