Lo-Fat Muffins

Ingredients
- 4 c grated carrots spooned not packed into cups
- 2 c sugar or 3 or 4 pkg artificial sweetener or part of each
- 1 can crushed pineapple drained
- 1 c prune puree recipe follows
- 4 large egg whites
- 2 tsp vanilla
- 2 c flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 12 tsp salt
- 34 c raisins optional
Directions
- Preheat oven to 375
- Coat 18 2 34-inch muffin tin cups with vegetable cooking spray set aside
