Lobster-Stuffed Potatoes

Ingredients

  • 4 medium potatoes
  • 3 Tbsp butter or margarine
  • 12 tsp salt
  • Dash of Pepper
  • 6 to 8 Tbsp hot milk or light cream
  • 1 can lobster 5-oz drained and flaked
  • 1 c sharp process American cheese shredded
  • 2 Tbsp chopped green onion

Directions

  1. Scrub potatoes rub skins with shortening and prick with fork Bake at 375 till done 70 to 80 minutes
  2. Cut slice from top of each
  3. Scoop out insides reserve shells
  4. Mash potatoes
  5. Add butter salt pepper and enough milk or cream to moisten
  6. Beat till fluffy
  7. Stir in lobster 34 cup cheese and onion
  8. Pile filling into potato shells
  9. Bake 20 to 25 minutes longer Sprinkle remaining cheese over tops of potatoes bake 3 minutes more
