Lobster Bisque

Ingredients

  • 2 c cooked chopped lobster meat
  • 2 c cold water
  • 4 Tbsp soft butter
  • 3 Tbsp unbleached all-purpose flour
  • 4 c low-fat milk
  • salt and pepper to taste
  • dash of cayenne pepper

Directions

  1. This soup is not suitable for freezing
  2. In large pot combine lobster meat and cold water
  3. Simmer covered for 15 minutes
  4. In large saucepan melt butter and blend in the flour
  5. Gradually add the milk and cook until thickened stirring frequently
  6. Add the milk mixture to the lobster mixture
  7. Stir well and reheat
  8. Add salt and pepper and cayenne pepper to taste and serve
  9. Yields 1 12 quarts
