Lobster Supreme

Ingredients
- 3 1 12 lb lobsters
- 4 Tbsp butter
- 12 tsp paprika
- dash of cayenne pepper
- dash of nutmeg
- 12 c dry sherry
- 1 12 c heavy cream
- 4 egg yolks beaten
Directions
- Cook lobsters 20 minutes in boiling salted water to cover Saute lobsters 3 minutes in butter
- Add seasoning and sherry Cook until wine is reduced to 2 tablespoons
- Blend in cream and egg yolks
- Add lobster cook over low heat until sauce thickens Serve on 6 slices of golden brown toast
