Ingredients

  • 1 c cornmeal
  • 1 Tbsp oil
  • 1 12 tsp sugar
  • 34 c boiling water
  • 1 egg separated
  • 34 c buttermilk

Directions

  1. Mix cornmeal sugar and oil
  2. Add 34 boiling water
  3. Mix well
  4. Beat egg yolk and add to mixture along with the buttermilk Whip egg white and fold in
  5. Pour into muffin tins sprayed with Pam
  6. Bake at 400 for 12-15 minutes
