Louisiana Jambalaya

Ingredients

  • 4 large pork chops or 6 chicken thighs can substitute wings breasts or other
  • 1 lb smoked sausage sliced
  • 2 to 3 Tbsp cooking oil
  • 1 Tbsp flour
  • 1 large onion chopped
  • 1 bell pepper chopped
  • 4 c water
  • 2 c long grain rice
  • 2 Tbsp Cajun seasoning salt
  • Cajun salt to season meat
  • 1 rib celery chopped
  • 2 cloves garlic optional

Directions

  1. Season meat generously
  2. In a 4 to 5 quart heavy pot heat oil
  3. Brown meat on all sides and remove
  4. Meat can be cut from bone or cut into smaller servings if desired
