Low-Fat Breakfast Casserole

Ingredients

• 1 lb turkey sausage
• 1 small can green chili
• 1 small onion chopped
• 12 red bell pepper chopped
• 6 slices bread crusts removed
• 12 c fat-free shredded cheese
• 2 c skim milk
• 1 12 c Egg Beaters or 6 whole eggs
• 1 tsp dry mustard

Directions

1. Preheat oven to 350 Brown sausage in skillet When its partially done add onion green chili and bell pepper Continue cooking until sausage is nicely browned Grease a 9 x 13-inch pan Place bread in pan Pour sausage mixture over bread Sprinkle with cheese Beat milk eggs and mustard together and pour over cheese Bake at 350 for 45 minutes Casserole may be made ahead of time and refrigerated If so set out at room temperature 15 minutes before baking
