Low-Fat Carrot Cake

Ingredients
- 1 c ground carrots
- 1 c raisins
- 1 c walnuts
- 3 Tbsp margarine
- 1 12 c water
- 1 tsp cinnamon
- 1 tsp cloves
- 1 tsp nutmeg
- 2 c flour
- 2 tsp soda
- 12 tsp salt
Directions
- Mix the first eight ingredients
- Heat to boil and then simmer 5 minutes
- Cool to warm and add flour soda and salt
- Mix well Bake in a greased and floured 9 x 13-inch pan 45 to 60 minutes at 325 or until done
