Low-Fat Carrot Cake

Ingredients

  • 1 c ground carrots
  • 1 c raisins
  • 1 c walnuts
  • 3 Tbsp margarine
  • 1 12 c water
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp nutmeg
  • 2 c flour
  • 2 tsp soda
  • 12 tsp salt

Directions

  1. Mix the first eight ingredients
  2. Heat to boil and then simmer 5 minutes
  3. Cool to warm and add flour soda and salt
  4. Mix well Bake in a greased and floured 9 x 13-inch pan 45 to 60 minutes at 325 or until done
