Low-Fat Chicken Salad

Ingredients

  • 2 c diced chicken preferably skinned white meat
  • 2 stalks celery diced
  • 1 or 2 c fruit such as grapes apples drained pineapple bits or mandarin oranges
  • 12 c chopped nuts
  • low-fat or no fat salad dressing
  • low-fat or no fat yogurt
  • curry powder to taste
  • salt and pepper to taste

Directions

  1. Mix the chicken fruit celery and nuts
  2. Add the dressing and yogurt to the desired consistency
  3. Start with about half teaspoon of curry powder
  4. Add salt and pepper and mix well
  5. This is a very eclectic recipe
  6. You can vary the amounts to suit you
  7. If you dont care for yogurt add more mayonnaise or salad dressing If you dont have nuts skip them
  8. If you dont like curry powder just use salt and pepper
