Low-Fat Oatmeal Raisin Cookies
Ingredients
- 1 egg
- 1 c packed brown sugar
- 2 Tbsp vegetable oil
- 34 c nonfat gelatin-free plain yogurt
- 2 tsp vanilla
- 2 c old-fashioned rolled oats
- 1 12 c flour
- 1 tsp baking soda
- 1 12 tsp cinnamon
- 14 tsp salt
- 1 c raisins
Directions
- Beat egg brown sugar and oil until smooth
- Beat in yogurt and vanilla
- Add oats flour baking soda cinnamon and salt Beat until well mixed
- Stir in raisins
- Drop batter by rounded teaspoonfuls about 2-inches apart on baking sheet lightly sprayed with vegetable oil spray
- Bake at 350 for 10 to 12 minutes or until cookies are lightly browned
- Cool on wire rack
- Each cookie contains 59 calories
- Makes 48 cookies
