Low-Fat Pork Lo Mein

Ingredients

  • 12 c mushrooms chopped
  • 12 lb lean pork loin
  • 1 head nappa cabbage
  • 2 to 3 whole scallions
  • 2 Tbsp canola oil
  • 12 tsp salt
  • 1 lb spaghetti cooked and drained
  • 2 Tbsp soy sauce

Directions

  1. Slice pork thinly and shred into match-stick sized strips Shred cabbage
  2. Cut scallions into 1-inch sections
  3. Heat oil until very hot in wok or heavy skillet
  4. Add salt then scallions Stir-fry 45 seconds
  5. Add pork
  6. Stir-fry 2 to 3 minutes
  7. Add cabbage and mushrooms
  8. Stir-fry 2 minutes
  9. Add spaghetti and soy sauce
  10. Toss with rest of mixture
  11. Cover and cook 5 minutes over medium heat
  12. Serves 6 to 8 Contains 340 calories and 7 grams fat per serving
