Low-Fat Pork Lo Mein
Ingredients
- 12 c mushrooms chopped
- 12 lb lean pork loin
- 1 head nappa cabbage
- 2 to 3 whole scallions
- 2 Tbsp canola oil
- 12 tsp salt
- 1 lb spaghetti cooked and drained
- 2 Tbsp soy sauce
Directions
- Slice pork thinly and shred into match-stick sized strips Shred cabbage
- Cut scallions into 1-inch sections
- Heat oil until very hot in wok or heavy skillet
- Add salt then scallions Stir-fry 45 seconds
- Add pork
- Stir-fry 2 to 3 minutes
- Add cabbage and mushrooms
- Stir-fry 2 minutes
- Add spaghetti and soy sauce
- Toss with rest of mixture
- Cover and cook 5 minutes over medium heat
- Serves 6 to 8 Contains 340 calories and 7 grams fat per serving
