Low-Fat Soft Ginger Cookies
Ingredients
- 7 c flour
- 12 tsp salt
- 1 tsp cinnamon
- 2 Tbsp ginger
- 14 c margarine
- 34 c cooked mashed prunes
- 12 c boiling water
- 12 c buttermilk
- 34 c sugar
- 1 egg
- 2 c molasses
- 2 Tbsp vinegar
- 12 tsp baking powder
- 4 tsp baking soda
Directions
- Stir flour salt baking powder and spices together
- Cream sugar margarine and egg until light
- Add prunes buttermilk molasses and vinegar and beat to combine
- Dissolve soda in boiling water
- Stir in flour mixture and soda water
- Drop onto greased baking sheet and bake for 15 to 17 minutes at 350
- Makes 6 dozen
