Low Calorie Pecan Pie

Ingredients

  • 4 oz drained cooked pinto beans mashed
  • 2 eggs
  • 12 c sugar
  • 3 oz crunchy nugget cereal like Grape-Nuts
  • 2 Tbsp margarine melted
  • 12 tsp vanilla extract
  • 12 tsp vinegar
  • brown sugar substitute to equal 1 c plus 3 Tbsp regular sugar

Directions

  1. Mix all ingredients together and pour into pie crust
  2. Bake at 350 for 35 to 40 minutes until firm
  3. For festive occasions add 1 ounce pecan halves to top of pie
