Low Calorie Pineapple Cheesecake

Ingredients
- 2 envelopes unflavored gelatin
- 1 c boiling water
- 1 tsp vanilla
- 2 tsp lemon juice
- 4 pkg sweetener
- 1 lb low-fat cottage cheese
- 1 large can crushed pineapple in its own juice
- 9 oz Cool Whip
Directions
- Blend together first two ingredients in a blender
- Then add the next four ingredients and blend until smooth
- Then fold in last 2 ingredients and pour into large baking dish
- Refrigerate until firm
- Cut into slices and serve
