Lower-Fat French Onion Soup

Ingredients

  • 1 12 tsp olive oil
  • 2 large yellow onions thinly sliced 3 c
  • 14 tsp dried thyme
  • 2 c water divided
  • 2 cloves minced garlic
  • 2 12 tsp all-purpose flour
  • 1 c reduced-sodium beef broth
  • 18 tsp ground nutmeg
  • 4 slices French bread toasted
  • 2 Tbsp grated Swiss cheese
  • 1 Tbsp grated Parmesan cheese

Directions

  1. In large nonstick skillet heat oil over medium heat
  2. Add onions thyme and 1 tablespoon water
  3. Cover cook 5 minutes Uncover reduce heat to medium-low
  4. Cook until onions are golden about 15 minutes
  5. Add garlic saute for 1 minute
  6. Add flour reduce heat to medium
  7. Cook stirring for 2 minutes
  8. Stir in broth remaining water and nutmeg
  9. Bring to a boil skim off foam
  10. Cover and simmer for 30 minutes
