Macaroni And Cheese Italian Style

Ingredients

  • 12 c chopped onion
  • 14 c chopped celery
  • 1 clove garlic
  • 4 Tbsp oil
  • 2 large cans tomato puree
  • 1 c water
  • 18 tsp black pepper
  • 14 tsp oregano and basil
  • 12 lb large macaroni cooked and drained
  • 1 lb Ricotta cheese
  • grated Parmesan cheese

Directions

  1. Cook onion celery and garlic in oil until soft remove garlic Add tomato water and seasoning
  2. Bring to boil simmer slowly for 1 hour
  3. In a shallow baking dish 8 x 8 x 2-inch put a thin layer of sauce
  4. Sprinkle with Parmesan cheese and top with half of the macaroni
  5. Top this with the Ricotta cheese
  6. Cover with some of the remaining sauce and sprinkle with Parmesan cheese
  7. Add macaroni and last of sauce
  8. Sprinkle generously with Parmesan cheese
  9. Bake in moderate oven at 350
  10. Makes 4 servings
