Macaroni And Cheese Italian Style
Ingredients
- 12 c chopped onion
- 14 c chopped celery
- 1 clove garlic
- 4 Tbsp oil
- 2 large cans tomato puree
- 1 c water
- 18 tsp black pepper
- 14 tsp oregano and basil
- 12 lb large macaroni cooked and drained
- 1 lb Ricotta cheese
- grated Parmesan cheese
Directions
- Cook onion celery and garlic in oil until soft remove garlic Add tomato water and seasoning
- Bring to boil simmer slowly for 1 hour
- In a shallow baking dish 8 x 8 x 2-inch put a thin layer of sauce
- Sprinkle with Parmesan cheese and top with half of the macaroni
- Top this with the Ricotta cheese
- Cover with some of the remaining sauce and sprinkle with Parmesan cheese
- Add macaroni and last of sauce
- Sprinkle generously with Parmesan cheese
- Bake in moderate oven at 350
- Makes 4 servings
