Macaroon Pie

Ingredients

  • 3 large egg whites
  • 1 c sugar
  • 24 2 inch sq saltine crackers finely crushed
  • 12 c chopped pecans
  • 1 tsp baking powder
  • dash of salt
  • 12 tsp vanilla
  • 14 tsp almond extract
  • vanilla ice cream or whipped cream for topping

Directions

  1. Generously butter and flour an 8-inch pie pan set aside Preheat oven to 300
  2. Beat egg whites until foamy then gradually add the sugar and beat until stiff
  3. Fold in remaining ingredients
  4. Pour into the prepared pie pan and bake for 45 to 50 minutes
  5. Cool completely
  6. Serve topped with scoop of ice cream or whipped cream
