Macaroon Pie

Ingredients
- 3 large egg whites
- 1 c sugar
- 24 2 inch sq saltine crackers finely crushed
- 12 c chopped pecans
- 1 tsp baking powder
- dash of salt
- 12 tsp vanilla
- 14 tsp almond extract
- vanilla ice cream or whipped cream for topping
Directions
- Generously butter and flour an 8-inch pie pan set aside Preheat oven to 300
- Beat egg whites until foamy then gradually add the sugar and beat until stiff
- Fold in remaining ingredients
- Pour into the prepared pie pan and bake for 45 to 50 minutes
- Cool completely
- Serve topped with scoop of ice cream or whipped cream
