Mama CrowS Raisin Nut Jam Cake

Ingredients

  • 1 c softened butter or margarine
  • 2 c sugar
  • 4 large eggs
  • 1 12 c jam blackberry is recommended
  • 3 c all-purpose flour
  • 2 tsp ground allspice
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 c buttermilk
  • 1 c dark raisins
  • 23 c chopped nuts prefer pecans

Directions

  1. In large mixing bowl beat butter and sugar until light and fluffy
  2. Beat in eggs well then add jam
  3. Add sifted dry ingredients alternately with buttermilk beginning and ending with dry ingredients and beat well after each addition
  4. Stir in raisins and nuts
  5. Pour into 3 greased and floured 9-inch cake pans
  6. Bake 40 minutes at 300 or until toothpick inserted in center of layer comes out clean
  7. Cool completely on racks
