Mama CrowS Raisin Nut Jam Cake
Ingredients
- 1 c softened butter or margarine
- 2 c sugar
- 4 large eggs
- 1 12 c jam blackberry is recommended
- 3 c all-purpose flour
- 2 tsp ground allspice
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1 c buttermilk
- 1 c dark raisins
- 23 c chopped nuts prefer pecans
Directions
- In large mixing bowl beat butter and sugar until light and fluffy
- Beat in eggs well then add jam
- Add sifted dry ingredients alternately with buttermilk beginning and ending with dry ingredients and beat well after each addition
- Stir in raisins and nuts
- Pour into 3 greased and floured 9-inch cake pans
- Bake 40 minutes at 300 or until toothpick inserted in center of layer comes out clean
- Cool completely on racks
