Manasta
Ingredients
- 3 lb spareribs
- 2 bunches escarole
- 2 cloves garlic
- salt and pepper
- red pepper to taste
Directions
- Cut and clean escarole
- Boil for 10 minutes
- Drain and set aside
- Cut spareribs discarding excess fat
- Put in pan with water to cover
- Boil 12 hour
- Skim off foam
- Add escarole garlic salt pepper and red pepper
- Simmer 30 to 45 minutes more
