Mandarin Duck Salad
Ingredients
- 2 tsp margarine
- 12 c sliced almonds
- 12 c olive oil
- 14 c red wine vinegar
- 1 Tbsp grated onion
- 14 tsp salt
- 14 tsp pepper
- 12 oz fresh spinach washed trimmed and torn into bite-sized pieces
- 1 c shredded cooked duck
- 1 c sliced fresh mushrooms
- 1 small red onion thinly sliced
- 11 oz can Mandarin orange segments drained
Directions
- In small skillet melt margarine over medium-low heat
- Add almonds
- Cook until light golden brown stirring constantly Remove from heat cool
