Mango Chutney
Ingredients
- 10 large green mangos
- 2 lb sugar
- 14 lb dates
- 14 lb preserved ginger
- 14 lb sultanas
- 6 chilies
- 1 oz garlic
- 1 Tbsp salt
- 34 bottle vinegar
Directions
- Peel and slice mangos
- Salt and cover with water overnight Strain and wash
- Boil all ingredients except sugar until tender
- Add sugar and simmer another 2 hours
- Bottle and seal
