Manhattan Clam ChowderServes 6
Ingredients
- 14 lb salt pork or bacon
- 1 large onion
- 2 ribs celery thinly sliced
- 1 green pepper diced
- 2 carrots diced
- 2 c diced raw potatoes cut 12-inch
- 1 tsp salt
- 14 tsp pepper
- 1 bay leaf
- 12 tsp thyme
- 2 c water
- 1 28 oz can tomatoes
- 1 qt shucked chopped clams and juice
Directions
- In a large skillet cook the salt pork or bacon until brown and crisp drain most of the fat
- Add the chopped onion and sliced celery saute until golden
- Add the diced green pepper carrots and potatoes with salt pepper bay leaf thyme water and tomatoes
- Cover and simmer gently until vegetables are tender Add chopped clams and juice cook for 5 minutes
- Serve hot
