Manhattan Clam ChowderServes 6

Ingredients

  • 14 lb salt pork or bacon
  • 1 large onion
  • 2 ribs celery thinly sliced
  • 1 green pepper diced
  • 2 carrots diced
  • 2 c diced raw potatoes cut 12-inch
  • 1 tsp salt
  • 14 tsp pepper
  • 1 bay leaf
  • 12 tsp thyme
  • 2 c water
  • 1 28 oz can tomatoes
  • 1 qt shucked chopped clams and juice

Directions

  1. In a large skillet cook the salt pork or bacon until brown and crisp drain most of the fat
  2. Add the chopped onion and sliced celery saute until golden
  3. Add the diced green pepper carrots and potatoes with salt pepper bay leaf thyme water and tomatoes
  4. Cover and simmer gently until vegetables are tender Add chopped clams and juice cook for 5 minutes
  5. Serve hot
