Manicotti Florentine

Ingredients

  • 12 c onion chopped
  • 1 garlic clove minced
  • 1 Tbsp butter
  • 2 10 oz pkg frozen chopped spinach cooked and drained
  • 1 lb Ricotta cheese
  • 4 oz Mozzarella cheese shredded
  • 12 c Parmesan cheese
  • 3 eggs slightly beaten
  • 1 Tbsp lemon juice
  • 1 tsp salt
  • dash of pepper
  • 12 large manicotti noodles cooked and drained
  • 1 16 oz jar spaghetti sauce

Directions

  1. Saute onion and garlic in butter until tender
  2. Combine sauteed vegetables spinach cheeses eggs lemon juice salt and pepper mix well
  3. Fill noodles with spinach mixture place in 13 x 9-inch baking dish
  4. Cover bake at 350 for 40 minutes
  5. Heat sauce pour over noodles
  6. Sprinkle with additional Parmesan cheese if desired
