Maple Pecan Corn Bread

Ingredients

  • 1 c all-purpose flour
  • 1 c yellow corn meal
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp soda
  • 3 Tbsp margarine
  • 2 Tbsp brown sugar
  • 2 eggs
  • 13 c pure maple syrup
  • 34 c buttermilk
  • 12 c chopped pecans

Directions

  1. Combine flour corn meal baking powder soda and salt
  2. Set aside
  3. In a mixing bowl combine margarine sugar and eggs mix well
  4. Add syrup and buttermilk
  5. Stir in dry ingredients just until moistened
  6. Stir in pecans
  7. Pour into a greased 8 12 x 4 12 x 2 12-inch loaf pan
  8. Bake at 350 for 35 to 40 minutes or until bread tests done
  9. Cool for 10 minutes in pan
