Marinated Artichokes

Ingredients
- 3 cans artichokes rinsed and quartered
- 3 cans anchovy filets chopped not the oil
- 3 bunches green onions chopped fine
- small amount parsley chopped
- 1 pt olive oil or enough to cover ingredients
- garlic if desired
Directions
- Mix all ingredients and allow to marinate for at least 2 hours
- Serve with crackers
- Better if made 1 or 2 days ahead
