Marinated Brussels Sprouts

Ingredients

  • 1 pt Brussels sprouts 2 c or 2 10 oz each pkg frozen Brussels sprouts
  • salt
  • water
  • 12 c thinly sliced celery 1 large rib
  • 1 14 12 oz can sliced tomatoes well drained
  • Lemon-Herb Dressing recipe follows
  • lettuce optional

Directions

  1. Cook sprouts in 2-inches boiling salted water for 4 to 6 minutes or until just tender drain
  2. Place in shallow bowl with celery and tomatoes
  3. Pour on dressing cover and chill at least 2 hours
  4. Drain before serving
  5. Spoon into lettuce-lined bowl Makes 4 servings
