Marinated Brussels Sprouts
Ingredients
- 1 pt Brussels sprouts 2 c or 2 10 oz each pkg frozen Brussels sprouts
- salt
- water
- 12 c thinly sliced celery 1 large rib
- 1 14 12 oz can sliced tomatoes well drained
- Lemon-Herb Dressing recipe follows
- lettuce optional
Directions
- Cook sprouts in 2-inches boiling salted water for 4 to 6 minutes or until just tender drain
- Place in shallow bowl with celery and tomatoes
- Pour on dressing cover and chill at least 2 hours
- Drain before serving
- Spoon into lettuce-lined bowl Makes 4 servings
