Marinated Carrots

Ingredients

  • 2 lb carrots
  • 1 large or medium onion
  • 1 large bell pepper
  • 1 can tomato soup
  • 13 c oil
  • 13 c vinegar
  • 13 c sugar

Directions

  1. Peel slice and cook carrots
  2. Add salt if desired
  3. Peel onion and chop
  4. Chop bell pepper
  5. Mix soup oil vinegar and sugar together
  6. Drain carrots and cool
  7. Put all ingredients together and stir
  8. Place in refrigerator let stand overnight Will keep in airtight container for 2 weeks
