Marinated Orange And Onion Salad

Ingredients
- 2 c fresh orange sections
- 1 medium purple onion thinly sliced and separated into rings
- 14 c red wine vinegar
- 1 Tbsp minced fresh parsley
- 3 c torn mixed salad greens
Directions
- Combine orange and onion in a large shallow dish
- Pour vinegar over mixture and toss
- Sprinkle with parsley
- Cover and refrigerate 4 hours stir occasionally
- Toss gently
- Serve over mixed greens using slotted spoon
- Makes 3 servings
