Marinated Shrimp And Artichokes

Ingredients

  • 2 14 oz cans artichoke hearts
  • 1 12 lb cooked peeled medium shrimp
  • 1 egg
  • 34 c olive oil
  • 14 c vegetable oil
  • 12 c wine vinegar
  • 2 tsp dry mustard
  • 2 Tbsp chives
  • 2 Tbsp chopped scallions
  • 1 tsp salt
  • 14 tsp pepper

Directions

  1. Chill marinated artichokes and shrimp
  2. Drain and quarter artichokes and combine with shrimp
  3. Beat together the olive and vegetable oils vinegar mustard chives scallions salt and pepper
  4. Pour over the shrimp and artichokes
  5. Refrigerate several hours
  6. Serve with toothpicks
