Maryland She-Crab Soup

Ingredients
- 1 lb crabmeat picked
- 3 Tbsp butter
- 1 c diced celery
- 12 c chopped onions
- 3 Tbsp flour
- 12 tsp salt
- 18 tsp pepper
- nutmeg to taste
- 2 c chicken broth
- 2 c light cream
Directions
- Melt butter in pan
- Add celery and onions
- Saute until tender
- Blend in flour and seasonings
- Gradually add chicken broth stirring constantly
- Heat to boiling
- Add cream and crabmeat
- Season with nutmeg to taste
- Do not boil
