Ingredients

  • 2 c flour
  • 2 tsp baking powder
  • 14 tsp salt
  • 1 lb candied pineapple coarsely cut
  • 1 lb whole candied cherries
  • 1 14 lb pitted dates chopped
  • 4 eggs
  • 1 c sugar
  • 2 lb pecans

Directions

  1. Combine flour baking powder and salt in large bowl Add pineapple cherries and dates Mix with hands until well incorporated Beat 4 eggs until frothy gradually beat in 1 cup sugar Add to fruit mixture mix well Add pecans and mix well Grease loaf pans and pack mixture in very firmly
  2. Bake at 275 for 1 hour Dont overbake Turn out on rack and cool
