Mashed Potato Candy

Ingredients

• 14 c cold mashed potato 1 potato
• 2 lb confectioners sugar
• 1 tsp vanilla

Directions

1. Add sugar and vanilla to cold potato
2. Roll with rolling pin dusted with flour
3. Spread with peanut butter
4. Roll up like a pinwheel place in refrigerator
5. Cut into slices
6. May be frozen Wrap in wax paper or plastic wrap so it doesnt dry out
