Meadowbrook Farm Traditional New YearS Day Dinner

Ingredients

  • 1 lb fresh pork cut into 1-inch cubes
  • 1 tsp salt
  • 14 tsp pepper
  • 2 Tbsp fat
  • 12 c water
  • 1 No 2 12 can sauerkraut
  • 1 apple pared and cored
  • 1 onion chopped
  • 4 dumplings

Directions

  1. Season pork cubes with salt and pepper
  2. Brown in fat in large heavy saucepan
  3. Combine water sauerkraut apple and onion add to pork
  4. Simmer 40 minutes
  5. Place dumplings on top of sauerkraut
  6. Cover pan steam until done
  7. Lift dumplings onto plate
  8. Place sauerkraut in deep dish or platter
  9. Cover with pork cubes top with dumplings
