Meatball Pasta Soup

Ingredients

• favorite meatball recipe
• 2 Tbsp vegetable oil
• 1 medium onion
• 1 carrot diced
• 1 12 c chopped celery
• 1 clove garlic minced
• 1 28 oz plum tomatoes
• 1 6 oz tomato paste
• 3 c water
• 1 tsp salt
• 1 tsp basil
• 12 tsp rosemary
• 14 tsp pepper
• 2 bay leaves
• 12 c twist macaroni
• 1 c chopped spinach
• grated Parmesan cheese

Directions

1. Make small 1-inch meatballs with your favorite recipe
2. Cook meatballs in Dutch oven
3. Cook vegetables in drippings add tomatoes paste and seasonings
4. Add meatballs
5. Bring to boil Reduce heat to low
6. Cover and simmer 30 minutes
7. Stir in macaroni
8. Cook 10 minutes
9. Stir in spinach
10. Cook 5 minutes Remove bay leaves
11. Garnish with cheese
