Meatball Pasta Soup
Ingredients
- favorite meatball recipe
- 2 Tbsp vegetable oil
- 1 medium onion
- 1 carrot diced
- 1 12 c chopped celery
- 1 clove garlic minced
- 1 28 oz plum tomatoes
- 1 6 oz tomato paste
- 3 c water
- 1 tsp salt
- 1 tsp basil
- 12 tsp rosemary
- 14 tsp pepper
- 2 bay leaves
- 12 c twist macaroni
- 1 c chopped spinach
- grated Parmesan cheese
Directions
- Make small 1-inch meatballs with your favorite recipe
- Cook meatballs in Dutch oven
- Cook vegetables in drippings add tomatoes paste and seasonings
- Add meatballs
- Bring to boil Reduce heat to low
- Cover and simmer 30 minutes
- Stir in macaroni
- Cook 10 minutes
- Stir in spinach
- Cook 5 minutes Remove bay leaves
- Garnish with cheese
